Kiwi Pop

Slice up a kiwi in about 1/2 inch thick. Insert a popsicle stick sideways into the kiwi slice and place on parchment paper.  Take 1 cup of semi sweet chocolate chips and put in a glass bowl or cup.  Heat it in the microwave for 30 seconds at a time until melted.   After fully melted dip each kiwi slice into the chocolate.  Place on parchment paper and freeze.  These are cool and fun treat in the hot summer.


Cherries & Ricotta with Toasted Almonds

INGREDIENTS
3/4 cup frozen pitted cherries
2 tablespoons part-skim ricotta
1 tablespoon toasted slivered almonds

PREPARATION
Heat cherries in the microwave on High until warm, 1 to 2 minutes. Top the cherries with ricotta and almonds.
TIPS & NOTES
Healthy Heart Variation: To reduce saturated fat even further, use nonfat ricotta in place of the reduced-fat ricotta.

Easy Strawberry treat!

  This is a healthier way to have dessert and your guests will love them!

-Strawberries
-Whipped Cream
- KnifeCut large strawberries in half leaving the bottom attached.  Take a can of your favorite whipped cream and fill the strawberries with it.


Nutella and banana

Slice up bananas and place them on a plate.  Take 1/4 cup of nutella and heat in the microwave 30 seconds at a time until melted.  Drizzle the nutella on top of the sliced bananas and add a dollop of whipped cream or yogurt.

Raspberry & Nectarine

Take half of a nectarine and place it in a bowl with the cut side up.  Get raspberry sorbet and place a scoop in the center.  Top with fresh raspberries and serve.

Banana Pops

These treats are a great way to get your kids to eat healthy snacks!  

Popsicle sticks
6 bananas cut in half
Greek Vanilla Yogurt
Sprinkles
Coconut shavings
Insert a popsicle stick into the flat bottom of each 1/2 piece of banana.  Put them in the freezer to harden for about an hour.  After you take them out


I <3 Rice cereal treats

Use the original rice cereal treat recipe and use half of the butter and non stick spray.  After spreading the mix out on a cookie sheet and allowing them to cool.. take a large heart shaped cookie cutter and cut the treats out.  A little cello bag and ribbon makes this treat a fun favor to have any time of year!  For fun add a little food dye to the marshmallow mix or sprinkle with decorator sprinkles!


Cranberry-Orange Trifle

- Fat free vanilla jello pudding, 
- Canned mandarine oranges - Whole fruit canned cranberries 
- 1" chunks of low fat pound cake 

This delicious holiday dessert is decadent without the 1200 calorie guilt!



Bananas & Chocolate

INGREDIENTS
1 tablespoon semisweet chocolate chips
1/2 banana, thinly sliced
1 tablespoon nonfat vanilla yogurt

PREPARATION
Melt chocolate chips in a small bowl in the microwave. Top banana slices with the chocolate and yogurt.

Smothered Apples

This is a fun twist on apple slices that the kids are sure to gobble up (adults love them too!)

2 large apples cut into wedges
Creamy peanut butter
Greek Yogurt
Granola, coconut and raisins for garnish

Take the apple slices and spread half with yogurt and half with peanut butter.  Have the children help you with sprinkle them with different combinations of the toppings.  Serve and eat!


Plum Apple Compote with Custard

COMPOTE
12 prune plums, or 8 red or black plums, pitted and chopped
1/3 cup apple cider
1/4 cup sugar, or
1/4 teaspoon ground cinnamon
4 large apples, such as Mutsu (Crispin), Fuji or Gala
CUSTARD
1 1/2 cups 1% milk, divided
1/4 cup sugar, or
1 tablespoon cornstarch
Pinch of salt
2 large eggs, lightly beaten
1 teaspoon vanilla extract

PREPARATION
To prepare compote: Combine plums, cider, 1/4 cup sugar (or Splenda) and cinnamon in a medium saucepan; bring to a simmer over medium heat. Cook, stirring occasionally, until the plums are soft and falling apart, about 5 minutes. Remove from the heat. Peel and grate apples. Stir the grated apples into the plums. Spoon the compote into a large bowl and chill in the refrigerator.

To prepare custard: Heat 1 cup milk in a saucepan over medium heat until steaming; do not boil. Mix 1/4 cup sugar (or Splenda), cornstarch and salt in a medium bowl. Add eggs and whisk until smooth. Whisk in the remaining 1/2 cup cold milk. Add the heated milk to the egg mixture, whisking constantly. Return the mixture to the saucepan. Cook over low heat, whisking constantly, until thickened, about 3 minutes. Remove from the heat and whisk in vanilla. Transfer the custard to a clean bowl and let cool slightly or refrigerate until chilled.
To serve, spoon custard into dessert dishes and top each with compote.

No crust Apple Pie

2 Apples
1 tsp Cinnamon
2 tbs Sugar
1 tbs butter
Whipped cream
Peel, core and slice up 2 apples.  Take a pan and add one table spoon of butter and add the slices.  Turn the heat on low and let these slow cook.  While the apples are cooking, sprinkle them with cinnamon and two tbs of sugar.  Once the apples are almost soft remove them from the heat.  Place the warm apples in a small bowl and add a dollop of whipped cream on top.  Chopped nuts would make a great garnish on this dish too.

Pretzel Love

This treat is a fun way to get kids involved with not only making healthy snack choices but also they are a fun way to make something together.  
-Large stick pretzels
- Valentine sprinkles
- white chocolate a
-Dark chocolate
Melt the chocolate in a bowl 15 seconds at a time until melted. Stir in-between each 15 seconds.
Next spoon on or dip each pretzel and while the chocolate is melted, sprinkle the desired topping on them.
lay on wax paper or stand upright in cups to let them cool.  Wrap them up as favors or have them for dessert after your Valentine dinner!


Dipped Strawberries are Healthy :o)

By making the dipping chocolate a little warmer and using a high cacao chocolate you can make this decadent treat a little healthier and your family happy you remembered the chocolate for Valentines day!
-Strawberries
- Dark chocolate
Melt the chocolate in a glass bowl in the microwave 15 seconds at a time until very liquid.  Dip the strawberries in the chocolate and let them cool on parchment paper.


Baby Tiramisu

INGREDIENTS
1/2 cup nonfat ricotta cheese, (4 ounces)
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
12 ladyfingers, (about 1 3/4 ounces)
4 tablespoons brewed espresso, or strong coffee, divided
2 tablespoons bittersweet chocolate chips, melted (see Tip)

PREPARATION
Combine ricotta, sugar, vanilla and cinnamon in a medium bowl.
Place 6 ladyfingers in a 9-by-5-inch (or similar size) loaf pan. Drizzle with 2 tablespoons espresso (or coffee). Spread the ricotta mixture over the ladyfingers. Place another layer of ladyfingers over the ricotta and drizzle with the remaining 2 tablespoons espresso (or coffee). Drizzle with melted chocolate. Refrigerate until the chocolate is set, about 30 minutes.

CHEESECAKE BITES

INGREDIENTS
4 whole-wheat graham crackers
4 tablespoons part-skim ricotta cheese
8 teaspoons jam

PREPARATION
Spread each graham cracker with 1 tablespoon part-skim ricotta cheese and 2 teaspoons jam.
